    The Department

    Our Catering Department manages one of the largest and most diverse catering operations in Hong Kong. We provide a wide range of catering, sports and recreation facilities for Members and their guests in three Clubhouses. In addition, both Happy Valley and Sha Tin Racecourses have numerous catering facilities used by Members, non-members and corporate organizations for a variety of functions.

    The Job

    You will:

  • Familiar with all different stove cooking techniques, especially braised and steamed of expensive dishes.
  • Identify the different herbs and spice, direct the subordinates to mix and prepare accurately.
  • Mix accurately the sauce, gravy, and seafood soy sauce; prepare the different sauces on the "five-spice" board.
  • Understand the characteristic of the food and clearly instruct the subordinates to prepare.
  • Direct Junior Cook on the mise-en-place, and the production requirement of the operation.
  • Direct the Dish Up on the mise-en-place, the food service procedures, and after-work environment sanitation.
  • Deputize the superior when they are off and monitor the subordinates to work efficiently.
  • Follow strictly the orders from superior, communicate with the subordinates and execute the orders.
  • Understand the recipes and the ingredients of all dishes and teach the subordinates.
  • Assist to monitor the quality of Junior Cooks' production and semi-cooked products.
  • Assist the superior to prepare expensive dishes, mainly the stir fried dishes.
  • Coordinate and monitor the staff's duty roster and attendance.
  • Direct Junior Cook to perform regular kitchen cleaning to ensure environment sanitation.
  • Inspect daily of the turn off of gas, water, and electricity, also to ensure the security measures.
  • Monitor kitchen staff's grooming, attire, discipline and personal hygiene.
  • Obey strictly the superiors' work arrangement and co-operate with rest of the team.
  • About You

    You should:

  • At least 3 years' experience in hospitality industry
  • At least 1 year in supervisory position
  • Understanding on the operation of Stove section HACCP and work safety
  • Good interpersonal and communication skill

    The level of appointment will be commensurate with qualifications and experience.
